The iconic Balcones Distillery is located in the heart of Waco, Texas. Master Distiller Jared Himstedt and his team have been at the forefront of the grain to glass craft distilling movement in Texas for the last ten years. Their unique passion, curiosity, and drive to create authentic Texas whisky manifests in a deep human connection with their spirits. Balcones has a commitment to honesty and transparency; they are whisky educators and ambassadors, with a focus on community investment. The inspiration for Balcones whisky begins with high-quality ingredients. The primary goal in crafting their range of whiskies is to preserve and accent the flavors of the select grains – blue corn, Golden Promise barley, Texas red winter wheat, and Elbon rye from Northwest Texas. Fermentation is carefully controlled to promote the production of flavorful esters before the resulting “wash” is distilled in Forsyth copper pot stills from Scotland. The whisky is then matured in several varieties of fine grain, yard seasoned, heavily toasted oak barrels – which maximizes the potential of the unique Texas climate during maturation.
The distillers personally smell and taste each barrel, to determine when the rich, full-bodied whisky is ready. The mature Balcones whisky has a signature weight, complexity, and density; it is packed with intense, rich flavors…and never chill filtered or colored. From the rich, fruity, and robust flagship Texas Single Malt, to the chocolate, citrus and spice notes of the Texas Rye, and the smoky, sweet barbecue flavors of Brimstone – Balcones embodies a classic Texas spirit, with innovation, boldness, and complex sophistication that is distilled to appreciate.
